3-Methylthiopropionaldehyde is een synthetische smaakstof die een kleurloze tot lichtgele vloeistof is met een intense vleesgeur. het polymeriseert met de jaren en is stabiel in een 50% alcoholoplossing. het moet in glazen containers worden bewaard. het wordt in lage concentraties gebruikt voor vlees- en bouillonaroma's voor toepassingen in vlees en specerijen bij 3 ppm en in gebak en dranken bij 0,5 ppm. |
